The Standard Offset Smoker is a made to order, heavy duty smoker built for consistent airflow, clean burns, and reliable temperature control. Designed for both serious backyard cooks and commercial operations, each smoker is fully customizable based on capacity, base style, and cooking surface configuration.
To build your smoker, you will choose the gallon size, base type, and rack setup that best fits how and where you plan to cook. All configuration options are explained in detail below.
Custom Sizes, Colors and Custom Cut Logos Available!
Smoker size refers to the volume of the main cook chamber and directly impacts cooking capacity and fuel use.
60 Gallon
Ideal for backyard use, small events, and personal cooks. Large enough to handle briskets, ribs, and multiple cuts without taking up excessive space.
120 Gallon
A strong step up in capacity for frequent cooks, larger gatherings, or small scale catering. Offers more room and better heat stability while remaining manageable for transport.
250 Gallon
Designed for serious volume cooking and commercial applications. Well suited for restaurants, competitions, and catering operations that need consistent output.
330 Gallon
Built for high volume cooks with extended run times. Ideal for commercial kitchens and event cooking where capacity and thermal mass matter.
500 Gallon
Maximum capacity smoker for large scale commercial use, festivals, and production level cooking. Built to handle long cooks and heavy workloads with ease.
If you are looking for a custom size outside of these options, please fill out the custom smoker inquiry form and we will reach out with next steps.
The base determines how the smoker is supported and moved.
Stand with Casters
Best for patios, garages, and flat surfaces. Casters allow easy repositioning while keeping the smoker stable during use.
- Available on 60 and 120 gallon models.
Stand with Offroad Wheels
Designed for gravel, grass, and uneven terrain. Larger wheels make it easier to move the smoker around yards, fields, and outdoor venues. - Available on 60 and 120 gallon models.
Skid Base
A stationary base intended for permanent or semi permanent placement. Common for commercial kitchens and locations where the smoker will be moved with equipment rather than by hand.
- Available on 250, 330, and 500 gallon models.
Trailer Mounted
Built for mobility and transport. Ideal for catering, events, competitions, and roadside setups. Allows the smoker to be towed and deployed wherever it is needed. - Available on 250, 330, and 500 gallon models.
Rack configuration determines how much usable cooking space you have inside the chamber.
Single Rack
A single full size cooking rack offers simple access and easy fire management. Best for larger cuts like brisket and pork shoulders.
Double Rack
Adds a second cooking rack to maximize capacity without increasing the smoker footprint. Ideal for ribs, chicken, and higher volume cooks.
For an added personal touch, we offer plasma cut company logos as a customization option. Logos are cut directly into the steel, creating a permanent, professional look that stands up to heat, weather, and long term use.
